Instant Pot Pork Carnitas

I feel like go big or go home could definitely apply here! This isn’t a 1-2lb pork recipe. I mean, I have 3 HUNGRY boys running around my house; I need easy dinner with minimal prep and cleanup, and ideally some leftovers so I don’t have to make lunch or dinner another day in the week.

These Instant Pot Carnitas check the boxes in all categories. While it does take some time to cook, your actual work time is minimal, and clean-up is a breeze.

We love these carnitas on their own with vegetable side dishes, in tacos or taco bowls, or even on nachos and Friday night pizza. YUM! Add them to your weekly meal plan. You won’t be disappointed.

Instant Pot Carnitas

Serves 10-12


1 Tbsp avocado oil

7lb pork shoulder, cut into large chunks

2 tsp garlic powder

1 Tbsp cumin

1 Tbsp salt

1 tsp oregano

2 bay leaves

½ red onion, diced

1 orange

1 cup water or chicken broth


  1. Turn Instant Pot on Sauté. Add oil

  2. Once hot, add pork. Brown on all sides

  3. Combine garlic powder, cumin, salt, and oregano and sprinkle over pork. Add bay leaves and onion

  4. Squeeze juice of one orange over pork. Add juiced orange and peel to the pot as well.

  5. Add water or broth to pot

  6. Cancel sauté, secure lid, and turn to manual pressure

  7. Cook on high pressure for approximately 105 minutes (or 15 min per pound of pork)

  8. Once done, allow pressure to slowly release or carefully do quick release method

  9. Remove pork from Instant Pot and shred with fork. Pork should easily shred. If not, place back in Instant Pot and cook on high pressure for 10-15 more minutes.

Want those crispy edges?

  1. Preheat oven to broil.

  2. Place shredded pork on baking sheet.

  3. Place under broiler for a few minutes or until pork just begins to brown and crisp.
